背景技术
营养指人体消化、吸收、利用食物或营养物质的过程,也是人类从外界获取食物满足自身生理需要的过程,包括摄取、消化、吸收和体内利用等。自然界可供人类食用的食物品种繁多,功用各异。但维持人体日常需要的营养素种类只有:蛋白质、糖类、脂肪、矿物质、维生素,食物纤维素和水7大类,共约40余种。它们各有其特殊的生理功能,共同参与人体的代谢活动。自然界任何种类的单一天然食物都无法提供人体所需的全部营养素,必须多种食物互相按一定比例搭配,才能满足人体合理的营养需求。因此合理营养强调的是:供给人类食用的食物中所含营养素应种类齐全、含量适度、比例适当。
营养粉是有各种营养材料制成的混合粉,是目前较为流行的营养补充品。鉴于近年消费者对食品安全的关注,因而从天然物中提取,特别是从通常食用的植物中提取功能性食品添加剂和配料成为国内外开发的热点。
现代社会生活节奏快,现代人身体大多处于亚健康状态,这时人们就会挑选一些保健品,尤其是营养粉来调理身体,而现有市场上的营养粉质量良莠不齐、配比不科学、功效夸大。
发明内容
针对上述现有技术中存在的问题,本发明的目的是提供一种虫草核桃肽营养粉及其制备方法。
为了实现上述目的,本发明采用的技术方案是:
一种虫草核桃肽营养粉,按质量份计,其由以下组分组成:蛹虫草4-6份、核桃仁4-6份、菊粉1-3份、蜂蜜4-6份;还包括微量柠檬酸混合物,所述柠檬酸混合物由质量比为1.5:1.5:1的柠檬酸、酒石酸和苹果酸组成。
所述的营养粉按照以下步骤制备:
(1)原料制备:取4-6份核桃仁,粉碎,过40目筛,取4-6份蛹虫草,粉碎,过40目筛,混合得到初料,按初料与水的质量比为1:15-20加入水,于50-60℃超声高速混溶提取1h,离心粗滤得到滤液和残渣,再按残渣与水的质量比1:10-15加入水,于50-60℃超声高速混溶提取1h,离心粗滤得到二次滤液和二次残渣,二次滤液再细滤,合并滤液和二次滤液,膜浓缩至料液比1:8-10,调节pH至6.0-7.0,得到原料;
(2)提取液的水解:向原料中加入质量分数为0.5-1.5‰的常温α-淀粉酶于55-65℃下水解2-4h,得到水解后的提取液;
(3)提取液酶解:将水解后的提取液调节pH至7.0-8.0,再加入质量分数为2-4‰的复合蛋白酶,于35-45℃下搅拌酶解3-4h,得到酶解后的提取液,其中复合蛋白酶为等量的生姜蛋白酶和木瓜蛋白酶混合而成;
(4)提取液澄清浓缩:向酶解后的提取液中加入质量分数为0.5-1.5%的食用型澄清剂,于35-45℃搅拌30min,脱苦、脱色、除杂,细滤,再经纳滤膜脱盐、反渗透膜浓缩,得到浓缩后的提取液;
添加辅料及干燥完成:在浓缩后的提取液中加入1-3份的菊粉、4-6份蜂蜜,微量的柠檬酸混合物,充分溶解,喷雾干燥制成细小颗粒,即虫草核桃肽营养粉,或制成虫草核桃肽营养咀嚼片,或制成虫草核桃肽营养胶囊,或打入无菌分装机制成虫草核桃肽口服液;所述柠檬酸混合物由质量比为1.5:1.5:1的柠檬酸、酒石酸和苹果酸组成。

为了使本发明的目的、技术方案及优点更加清楚明白,以下结合附图及实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅仅用以解释本发明,并不用于限定本发明。
本发明提供一种虫草核桃肽营养粉,按质量份计,其由以下组分组成:蛹虫草4-6份、核桃仁4-6份、菊粉1-3份、蜂蜜4-6份;还包括微量柠檬酸混合物,所述柠檬酸混合物由质量比为1.5:1.5:1的柠檬酸、酒石酸和苹果酸组成。加入柠檬酸混合物的主要作用为调口味,其添加量为0.001份。
一种虫草核桃肽营养粉,所述的营养粉按照以下步骤制备:
(1)原料制备:取4-6份核桃仁,粉碎,过40目筛,取4-6份蛹虫草,粉碎,过40目筛,混合得到初料,按初料与水的质量比为1:15-20加入水,于50-60℃超声高速混溶提取1h,离心粗滤得到残渣,再按残渣与水的质量比1:10-15加入水,于50-60℃超声高速混溶提取1h,离心粗滤,细滤,合并滤液,膜浓缩至料液比1:8-10,调节pH至6.0-7.0,得到原料;
(2)提取液的水解:向原料中加入质量分数为0.5-1.5‰的常温α-淀粉酶于55-65℃下水解2-4h,得到水解后的提取液;除去提取液中严重影响产品溶解性的淀粉。
(3)提取液酶解:将水解后的提取液调节pH至7.0-8.0,再加入质量分数为2-4‰的复合蛋白酶,于35-45℃下搅拌酶解3-4h,得到酶解后的提取液,其中复合蛋白酶为等量的生姜蛋白酶和木瓜蛋白酶混合而成;使提取液中虫草蛋白、核桃蛋白水解为虫草肽、核桃肽。
(4)提取液澄清浓缩:向酶解后的提取液中加入质量分数为0.5-1.5%的食用型澄清剂,于35-45℃搅拌30min,脱苦、脱色、除杂,细滤,再经纳滤膜脱盐、反渗透膜浓缩,得到浓缩后的提取液;
(5)添加辅料及干燥完成:在浓缩后的提取液中加入1-3份的菊粉、4-6份蜂蜜,微量的柠檬酸混合物,充分溶解,喷雾干燥制成细小颗粒,即虫草核桃肽营养粉,或制成虫草核桃肽营养咀嚼片,或制成虫草核桃肽营养胶囊,或打入无菌分装机制成虫草核桃肽口服液;所述柠檬酸混合物由质量比为1.5:1.5:1的柠檬酸、酒石酸和苹果酸组成。
实施例1:
取20kg核桃仁,粉碎,过40目筛,取20kg份蛹虫草,粉碎,过40目筛,混合得到初料,按初料与水的质量比为1:15加入水,于50℃超声高速混溶提取1h,离心粗滤得到残渣,再按残渣与水的质量比1:10加入水,于50℃超声高速混溶提取1h,离心粗滤,细滤,合并滤液,膜浓缩至料液比1:8,调节pH至6.0,得到原料。向原料中加入质量分数为0.5‰的常温α-淀粉酶于55℃下水解2h,得到水解后的提取液。将水解后的提取液调节pH至7.0,再加入质量分数为2‰的复合蛋白酶,于35℃下搅拌酶解3h,得到酶解后的提取液。向酶解后的提取液中加入质量分数为0.5%的食用型澄清剂,于35℃搅拌30min,脱苦、脱色、除杂,细滤,再经纳滤膜脱盐、反渗透膜浓缩,得到浓缩后的提取液。在浓缩后的提取液中加入5kg的菊粉、20kg蜂蜜,微量的柠檬酸混合物,充分溶解,喷雾干燥制成细小颗粒,约15.26kg,即为虫草核桃肽营养粉。
实施例2:
取25kg核桃仁,粉碎,过40目筛,取25kg蛹虫草,粉碎,过40目筛,混合得到初料,按初料与水的质量比为1:18加入水,于55℃超声高速混溶提取1h,离心粗滤得到残渣,再按残渣与水的质量比1:12加入水,于55℃超声高速混溶提取1h,离心粗滤,细滤,合并滤液,膜浓缩至料液比1:9,调节pH至6.5,得到原料。向原料中加入质量分数为1.0‰的常温α-淀粉酶于60℃下水解3h,得到水解后的提取液。将水解后的提取液调节pH至7.5,再加入质量分数为3‰的复合蛋白酶,于40℃下搅拌酶解3h,得到酶解后的提取液。向酶解后的提取液中加入质量分数为1.0%的食用型澄清剂,于40℃搅拌30min,脱苦、脱色、除杂,细滤,再经纳滤膜脱盐、反渗透膜浓缩,得到浓缩后的提取液。在浓缩后的提取液中加入10kg的菊粉、25kg蜂蜜,微量的柠檬酸混合物,充分溶解,喷雾干燥制成细小颗粒,约22.52kg,即为虫草核桃肽营养粉。
实施例3:
取30kg核桃仁,粉碎,过40目筛,取30kg蛹虫草,粉碎,过40目筛,混合得到初料,按初料与水的质量比为1:20加入水,于60℃超声高速混溶提取1h,离心粗滤得到残渣,再按残渣与水的质量比1:15加入水,于60℃超声高速混溶提取1h,离心粗滤,细滤,合并滤液,膜浓缩至料液比1:10,调节pH至7.0,得到原料。向原料中加入质量分数为1.5‰的常温α-淀粉酶于65℃下水解4h,得到水解后的提取液。将水解后的提取液调节pH至8.0,再加入质量分数为4‰的复合蛋白酶,于45℃下搅拌酶解4h,得到酶解后的提取液。向酶解后的提取液中加入质量分数为1.5%的食用型澄清剂,于45℃搅拌30min,脱苦、脱色、除杂,细滤,再经纳滤膜脱盐、反渗透膜浓缩,得到浓缩后的提取液。在浓缩后的提取液中加入15kg的菊粉、30kg蜂蜜,微量的柠檬酸混合物,充分溶解,喷雾干燥制成细小颗粒,约30.18kg,即为虫草核桃肽营养粉。

Claims (2)
1.一种虫草核桃肽营养粉,其特征在于,按质量份计,其由以下组分组成:蛹虫草4-6份、核桃仁4-6份、菊粉1-3份、蜂蜜4-6份;还包括微量柠檬酸混合物,所述柠檬酸混合物由质量比为1.5:1.5:1的柠檬酸、酒石酸和苹果酸组成。
2.根据权利要求1所述的一种虫草核桃肽营养粉,其特征在于,所述的营养粉按照以下步骤制备:
原料制备:取4-6份核桃仁,粉碎,过40目筛,取4-6份蛹虫草,粉碎,过40目筛,混合得到初料,按初料与水的质量比为1:15-20加入水,于50-60℃超声高速混溶提取1h,离心粗滤得到滤液和残渣,再按残渣与水的质量比1:10-15加入水,于50-60℃超声高速混溶提取1h,离心粗滤得到二次滤液和二次残渣,二次滤液再细滤,合并滤液和二次滤液,膜浓缩至料液比1:8-10,调节pH至6.0-7.0,得到原料;
提取液的水解:向原料中加入质量分数为0.5-1.5‰的常温α-淀粉酶于55-65℃下水解2-4h,得到水解后的提取液;
提取液酶解:将水解后的提取液调节pH至7.0-8.0,再加入质量分数为2-4‰的复合蛋白酶,于35-45℃下搅拌酶解3-4h,得到酶解后的提取液,其中复合蛋白酶为等量的生姜蛋白酶和木瓜蛋白酶混合而成;
提取液澄清浓缩:向酶解后的提取液中加入质量分数为0.5-1.5%的食用型澄清剂,于35-45℃搅拌30min,脱苦、脱色、除杂,细滤,再经纳滤膜脱盐、反渗透膜浓缩,得到浓缩后的提取液;
添加辅料及干燥完成:在浓缩后的提取液中加入1-3份的菊粉、4-6份蜂蜜,微量的柠檬酸混合物,充分溶解,喷雾干燥制成细小颗粒,即虫草核桃肽营养粉,或制成虫草核桃肽营养咀嚼片,或制成虫草核桃肽营养胶囊,或打入无菌分装机制成虫草核桃肽口服液;所述柠檬酸混合物由质量比为1.5:1.5:1的柠檬酸、酒石酸和苹果酸组成。
