Description
技术领域
本发明涉及用于提供调味品组合物的方法。具体地讲,本发明涉及包含微粉化调味品颗粒的饮料和烹饪产品。
本发明涉及调味品在奶精、饮料粉末、即饮液体饮料制剂或烹饪应用中的用途。
背景技术
调味品组合物被广泛作为调味均衡配料用于例如饮料(诸如香草、小豆蔻、肉桂、姜的调味品)或烹饪应用(诸如咖喱、芥末、肉豆蔻、辣椒、胡椒、小茴香、藏红花的调味品)中。在本专利的上下文中,我们还将通过诸如菊苣的根、诸如小麦的谷物、诸如枣椰仁的果仁的烘焙过程而实现其风味特征的配料视为调味品。它们的基本组成也可以用作奶油汤或奶油酱。在所有描述的申请中,一定的脂肪含量提供顺滑圆润的味道,并通过通常被称为乳脂性的黏附感提供良好口感。这些感觉通常通过加入通常由化学合成或提取天然化合物而制备的香味剂和/或风味化合物来支持。
调味品本质上是疏水性的,并且在含水液体中重构时经常会出现结块、溶解问题。
天然提取物或通过化学分析得到的风味混合物用于使饮料粉末、液体或粉末状奶精、奶油酱、奶油汤或RTD饮料芳香化。许多天然来源的香味剂和/或调味剂的水溶性差,不能发挥整个香味剂和调味剂的潜力。因此,由于在所述产品组中的不良性能,在这些应用中几乎不可能使用天然来源。
随着时间的推移,调味品粉末会不再新鲜,失去味道强度。这是由于粉末的比表面积较高,香味剂对氧化非常敏感并且挥发性物质快速丢失。新鲜研磨的调味品的味道不能长久维持。调味品粉末以干燥混合的方式加入饮料粉末中。一旦混合到饮料粉末中,调味品将由于其疏水特性而难以重构。
JP2008167723涉及生产液体调味料的方法,该液体调味料包含芝麻、水相和油相,该方法包括在油相中磨碎芝麻之后将其与其他原材料混合。EP0522704涉及食品改良剂及其制备方法。
因此本发明通过在油中微粉化这类物质并将这些组合物分散到水相中解决了上述问题,并且还提供了稳定的分散性和更好的重构性。纤维颗粒在油中强烈混合、剪切和研磨形成油包裹的微颗粒,当其分散在水中时像油滴一样运动。
发明内容
本发明的一个方面涉及用于提供调味品组合物的方法,该方法包括用于获得第一组合物的第一混合步骤和用于获得第二组合物的第二混合步骤;其中
a)在第一混合步骤中,将油组分与调味品混合并研磨油中的调味品,从而提供包含掺入到该油组分中的微粉化调味品的第一组合物;
b)提供包含乳蛋白、植物蛋白或其组合的水性组分,从而提供第二组合物;
c)在第二混合步骤中,将第一组合物与第二组合物混合;以及
d)将所述组合物均质化,从而提供水包油乳液。
本发明的另一个方面涉及水包油乳化型调味品组合物,该组合物可通过上述方法获得。
本发明的另外方面涉及本发明的调味品组合物的用途、包含该调味品组合物的食物配料以及食物产品。
没有一项现有技术能够提供增强组合物稳定性的解决方案,特别是减少沉降和增强其他所需特性诸如香味释放的解决方案。通过本发明实现的所需稳定化效果如图1所示,其中微粉化颗粒和油滴以被称为“气球效应”的方式进行相互作用,显示出始终均匀的产物,其通过将植物种子颗粒包封在油中并将其引入如下所述的奶精组分来实现。圆形颗粒代表乳液中的油滴。如果乳液不稳定,则油滴合并在一起。
现将在下文中更详细地描述本发明。

图6示出了如实施例3所述的溶解动力学评估结果。可以发现,根据本发明的产品(在油中微粉化的肉桂)比具有相同脂肪和肉桂含量(干燥混合)的参照样品溶解得更快。
图7示出了市售咖喱粉末(d90为240μm)和在油中微粉化的咖喱颗粒(d90为134μm)的粒度分布。
具体实施方式
如上所述,本发明涉及用于提供具有改善的溶解度并且具有增强的味道和/或香味特征的调味品组合物的方法。因此,本发明的一个方面涉及用于提供调味品组合物的方法,该方法包括:
a)在第一混合步骤中,将油组分与调味品混合并研磨油中的调味品,从而提供包含掺入到该油组分中的微粉化调味品的第一组合物;
b)提供包含乳蛋白、乳制品或植物蛋白或其组合的水性组分,从而提供第二组合物;
c)在第二混合步骤中,将第一组合物与第二组合物混合;以及
d)将所述组合物均质化,从而提供水包油乳液。
在一个实施方案中,该方法还包括以下步骤:向水包油乳液中加入膨松剂和/或甜味剂;并且对水包油乳液进行巴氏灭菌或商业杀菌。所述膨松剂包含麦芽糖糊精,并且所述甜味剂包含糖和/或碳水化合物的组合。
不同组分的混合顺序可改变。优选的是,将油相和水相单独制备。通常将乳化剂混合到油中,但也可加入水相中。将蛋白质和其他乳蛋白(例如奶精组分)溶解于水相中。随后,将两相混合并均质化以制成乳液,该乳液可以液体形式使用或被干燥。调味品颗粒可仅掺入(并研磨到)油的一部分中,之后可添加另外的油。因此,在一个实施方案中,在步骤d)后,例如在巴氏灭菌和/或干燥之前,加入一种或多种另外的油组分。
调味品颗粒优选在加入油中后微粉化(例如,通过研磨),但是调味品颗粒也可以微粉化的形式提供到油中。
术语“调味品”涉及主要用于调味、着色或保存食物的干燥种子、果实、树皮、根或植物性物质。出于本发明的目的,咖啡不被视为调味品并被放弃。
合适的调味品的示例为:

在一个实施方案中,水性组分为乳制品组分,并且可包含一种或多种乳制品配料或乳制品的替代配料。例如,所述乳制品配料可为乳质、乳脂、奶粉、脱脂奶、乳蛋白及其组合。合适的乳蛋白的示例为酪蛋白、酪蛋白酸盐、酪蛋白水解物、乳清、乳清水解物、乳清浓缩物、乳清分离物、乳蛋白浓缩物、乳蛋白分离物及其组合。具体而言,乳制品蛋白可为(例如)甜乳清、酸乳清、α-乳白蛋白、β-乳球蛋白、牛血清白蛋白、酸性酪蛋白、酪蛋白酸盐、α-酪蛋白、β-酪蛋白和/或γ-酪蛋白。合适的乳制品替代配料包括(例如)大豆蛋白、大米蛋白和其组合。在一个实施方案中,乳脂以饮料的约0%至约1.5%的量存在于饮料中。在一个实施方案中,乳脂是饮料中唯一的脂肪来源。例如,饮料可不含添加的油。
乳化剂优选在步骤a)中添加至第一组合物,但也可在其他步骤中添加。因此,在一个实施方案中,将一种或多种乳化剂:
-在步骤a)中添加至第一组合物;和/或
-在步骤b)中添加至水性组分;和/或
-在混合步骤c)期间添加;和/或
-在均质化步骤d)期间添加。

混合步骤a)可以通过不同方式执行。在一个实施方案中,第一混合步骤a)通过研磨以使调味品组分微粉化来完成。在本发明的上下文中,术语“微粉化”涉及一种方法,在该方法中,颗粒被加工成粒度小于100微米(μm)(例如在0.1μm至50μm的范围内,例如在1μm至30μm的范围内,例如在1μm至20μm的范围内)。类似地,术语“微粉化的”涉及平均粒度小于100微米(μm)(例如在0.1μm至50μm的范围内,例如在1μm至20μm的范围内,或例如在1μm至20μm的范围内)的颗粒。研磨优选在球磨机中通过湿磨或干磨来进行。在本发明的一个实施方案中,第一混合步骤a)通过研磨以使调味品组分微粉化来完成。研磨可例如为在油或融化脂肪中对调味品进行的辊磨或将调味品研磨到油中的冲击研磨。
步骤a)的油组分可选自不同来源。在一个实施方案中,步骤a)的油组分包含选自以下的油:棕榈仁油、低芥酸菜籽油、大豆油、向日葵油、红花油、棉籽油、棕桐油、乳脂、玉米油、油的高油酸变体如高油酸大豆油、高油酸菜籽油、高油酸红花油、高油酸向日葵油和/或椰子油。所述油优选以至多约50%(重量/重量)的量存在于最终产品组合物中,最终产品组合物中的油的量可例如介于1%和40%(重量/重量)之间,例如在5%至40%的范围内,例如在10%至40%的范围内,例如在5%至30%的范围内,或例如在介于10至30%的范围内。在本发明的上下文中,当油以重量/重量百分比包括在内时,该百分比与非水但包括油的部分有关(固形物含量+油)。水性组合物中的包含微粉化调味品的油组分的总量也可改变。因此,在另一个实施方案中,水性组合物包含至少5%(w/w)的其中包含微粉化调味品的油组分,例如在5%至50%的范围内,例如5%至40%、例如5%至30%,例如在5%至20%的范围内,或例如在5%至15%的范围内。在另一个实施方案中,水性组合物包含至少20%(w/w)的其中包含微粉化调味品的油组分。应当理解,这些重量%中包含有油和油中的微粉化调味品两者。
在本发明的上下文中,除非另外指明,否则所提及的百分比为干燥固形物的重量/重量百分比(基于干燥物质)。
本发明的方法还包括添加奶精组分,优选以含水形式。所谓奶精组合物是指预期加入食品组合物中以赋予特定特性诸如颜色(如,增白效果)、风味、质地、口感和/或其他所需特性的组合物。因此本发明所提供的调味品组合物也可以用作奶精。步骤b)中提供的奶精组分呈液体形式,但是本发明的最终奶精组合物可呈液体形式或粉末状(干燥)形式。在本发明的上下文中,干燥调味品应理解为具有低于10%、优选低于5%或更优选低于3%的含水量。
奶精组分可以是用于包含在水性组合物中的任何配料或配料组合。因此,在一个实施方案中,步骤b)的水性组分包含蛋白质、亲水胶体、缓冲剂和/或甜味剂。
水性组分优选包含蛋白质,所述蛋白质的量在0.5%至15%的范围内,例如1.5%至10%,例如1.5%至5%,优选介于约0.1%至3%之间,例如在约0.2%至2%之间,更优选介于约0.5%(重量/重量)与约1.5%之间。该蛋白质可以是任何合适的蛋白质,例如乳蛋白质,如酪蛋白、酪蛋白酸盐和乳清蛋白;植物蛋白如大豆和/或豌豆蛋白;和/或其组合。该蛋白质优选为酪蛋白酸钠。该组合物中的蛋白质可充当乳化剂、提供质地和/或提供增白效果。过低含量的蛋白质会降低液体奶精的稳定性。而在过高蛋白质含量下,产品粘度可能高于期望的粘度并且过高以致不易进行液体处理。
水性组分可包含亲水胶体。亲水胶体可有助于改善组合物的物理稳定性。合适的亲水胶体可以例如是卡拉胶,如κ-卡拉胶、1-卡拉胶和/或入-卡拉胶;淀粉,如改性淀粉;纤维素,如微晶纤维素、甲基纤维素或羰甲基纤维素;琼脂;明胶;结冷胶(如高酰基结冷胶、低酰基结冷胶);瓜尔胶;阿拉伯树胶;魔芋胶;刺槐豆胶;果胶;海藻酸钠;麦芽糖糊精;黄蓍胶;黄原胶;或其组合。
本发明的水性组分可还包含缓冲剂。缓冲剂可防止奶精在加入热的酸性环境中时发生不期望的乳液分层或沉淀。缓冲剂可以例如是单磷酸盐、二磷酸盐、碳酸钠或碳酸氢钠、碳酸钾或碳酸氢钾、或其组合。优选的缓冲剂为盐,例如磷酸钾、磷酸氢二钾、磷酸氢钾、碳酸氢钠、柠檬酸钠、磷酸钠、磷酸二钠、磷酸氢钠和三聚磷酸钠。缓冲剂的量可以例如为奶精的约0.1重量%至3重量%。
本发明的水性组分还可包含一种或多种另外的成分,例如风味剂、甜味剂、着色剂、抗氧化剂(例如脂质抗氧化剂),或这些物质的组合。甜味剂可包括例如蔗糖、果糖、右旋糖、麦芽糖、糊精、左旋糖、塔格糖、半乳糖、玉米糖浆固形物以及其他天然或人造甜味剂。无糖甜味剂可包括但不限于单独或组合的糖醇,例如麦芽糖醇、木糖醇、山梨糖醇、赤藓糖醇、甘露糖醇、异麦芽酮糖醇(isomalt)、乳糖醇、氢化淀粉水解物等等。风味物、甜味剂和着色剂的使用水平将有很大差别,并且将取决于如甜味剂的功效、产品所需甜度、所用风味物的水平和类型、以及成本考虑等因素。可使用糖和/或无糖甜味剂的组合。在一个实施方案中,本发明的奶精组合物中存在的甜味剂的浓度范围为总组合物的约5重量%至90重量%,例如在20%至90%的范围内,优选如20%至70%。在另一个实施方案中,甜味剂的浓度范围为总组合物的约40重量%至约60重量%。在一个优选的实施方案中,步骤e)的甜味剂是葡萄糖浆。
在一个优选的实施方案中,水性组分包含酪蛋白酸钠、磷酸氢二钾、六偏磷酸钠、柠檬酸三钠、氯化钠和水。在另一个实施方案中,步骤b)的水性组分是非乳制奶精。在处理酪蛋白酸钠时,其会发生实质改变,因此乳制品研究人员以及政府监管机构不再将其视为真正的乳制品。根据FDA法规,这就是酪蛋白酸钠可作为非乳制产品的成分的原因。

技术人员可以制备奶精的其他变体。因此,以上奶精组合物仅为水性组合物的示例。
该方法还可包括巴氏灭菌步骤。因此,在另一个实施方案中,巴氏灭菌步骤在81℃的最低温度下执行至少5秒。巴氏灭菌步骤之后得到的调味品组合物可用于生产RTD饮料。该方法还可包括干燥步骤。因此,在另一个实施方案中,干燥步骤通过喷雾干燥、真空带式干燥、滚筒干燥或冷冻干燥来进行。干燥步骤之后得到的调味品组合物可用于生产饮料行业所用奶精,例如作为咖啡和茶饮料的乳添加剂。干燥混合之后的调味品组合物可用来生产用于零售的饮料粉末(例如,巧克力/麦芽饮料、混合咖啡)烘焙和烹饪产品(例如,奶油汤、奶油酱)。这样的调味品组合物也可用于制备将在饮料分配器中使用的胶囊。
如前所述,调味品还可呈干燥形式。因此,本发明的又一个方面涉及水包油乳化型干调味品组合物,该组合物包含:
-油组分,该油组分包含掺入到其中的微粉化调味品;以及
-水性组分,例如包含酪蛋白酸钠。
微粉化调味品的量也可相对于其掺入的油的量进行限定。因此,在另一个实施方案中,掺入油中的微粉化调味品的量与油的量之间的重量/重量比(或重量比率)在0.01∶1至2∶1的范围内,例如0.05∶1至2∶1、例如0.1∶1至2∶1、例如0.1∶1至1∶1、例如0.4∶1至1∶1、例如0.6∶1至1∶1、例如0.8∶1至1、或例如1∶1。

实施例1
用于提供即饮(RTD)饮料的方法
方法
在T=60℃下将经研磨的香草豆荚(粒度分布示于图2A中)加入到棕榈仁油中,混合20分钟,直到完全分散。然后使用湿砂磨机(Hosokawa Alpine水磨机90AHM(HosokawaAlpine Hydro-Mill 90AHM),T=65℃,1.7/1.9mm氧化锆珠,3000RPM,TS33)将该香草在油中的分散体微粉化。
通过砂磨机两次之后,微粉化颗粒的粒度分布特征在于d90,3为55μm,即90%的质量为直径小于55微米的颗粒。相应的粒度分布示于图2B中。
同时,将脱脂奶(95%)和糖(5%)混合,并在容器中于50℃下搅拌。
然后,混合油性制备物和水性制备物,并在50℃下搅拌。预热(80℃)最终混合物,经直接蒸汽喷射进行UHT处理(145℃下,APV-HTST,持续5秒),快速冷却至80℃并均质化(APV-HTST)。
最终液体饮料包含93.5%的脱脂奶、4%的糖、2%的脂肪和0.5%的微粉化香草。
制备组成相同的参照RTD饮料,其中香草不是如本发明所述经由油相加入,而是与糖一起混合到脱脂奶中。干磨的参照香草粉末的粒度分布如图2C所示。其特征在于d90,3为220μm。
沉降试验
将饮料样品倒入T=25℃的杯子中。使饮料沉降5分钟,并使用沉降平衡:带有密度测定套件Balance Link软件4.02版的Mettler Toledo XP404S Excellence Plus,通过测量杯中浸入板上沉降的质量来完成沉降试验。

实施例2
用于提供奶精的方法
方法
将经研磨的香草豆荚(粒度分布示于图2A中)与预加热的棕榈仁油混合,并使用湿砂磨机(Hosokawa Alpine水磨机90AHM(Hosokawa Alpine Hydro-Mill 90AHM),T=65℃,1.7/1.9mm氧化锆珠,3000RPM,TS33)进行微粉化。
通过砂磨机两次之后,微粉化颗粒的粒度分布特征在于d90,3为55μm,即90%的质量为直径小于55微米的颗粒。
然后,将含有微粉化香草颗粒的油与单甘油酯DimodanTM和PanodanTM(杜邦公司(Dupont))混合。同时,将典型非乳制乳脂替代品成分(酪蛋白酸钠、磷酸氢二钾、六偏磷酸钠、柠檬酸钠和氯化钠)混合于水中,并置于容器中在50℃下进行搅拌。
然后,混合这两种混合物,并在50℃下搅拌,同时加入葡萄糖浆。将最终混合物均质化(APV-HTST),并对其进行巴氏灭菌(在85℃下,APV-HTST,持续5秒)。接着,在160℃下,对经过巴氏灭菌的混合物进行喷雾干燥(NIRO SD-6.3-N)。
在此实施例中,通过油相加入的香草颗粒占最终奶精干重的5%。植物油占奶精制剂干重的35%。
制备组成相同的参照奶精,其中香草不是如本发明所述经由油相加入,而是干混到喷雾干燥的奶精制剂中。干磨的参照香草粉末的粒度分布如图2C所示。其特征在于d90,3为220μm。
感官数据
香草奶精组合物的感官特征由感官小组成员评价。根据本发明的奶精制剂相对于组成相同的参照样品进行评估。对于参照样品,在干混步骤中,向由棕榈仁油(35%)制备的参照奶精制剂中加入5%的香草粉末。评定组发现,本发明的组合物呈现出具有增强的口感和厚度的顺滑且稳定的悬浮液。如上所述,在食用过程中未发现沉降。详细的观察结果示于表4中。
表4:感官评价结果
流程
·样品用3位数字编码,以相同的顺序呈现给所有参与者。除了感官分析师和主持会议的实验厨房小组之外,参与者对样品是不知情的。
·为参与者提供纸质问卷,并要求其使用说明性的不带个人喜好的词汇尽可能详细地描述每个样本。
·参与者按相同的顺序各自品尝样品。
·样品成对进行测试。
·每对样品之后,参与者与小组分享他们的点评,然后逐一对样品进行讨论。
·每对品尝的样品之间有暂停。在暂停期间,参与者须用Vittel水清洗口腔。
·在会议的最后,汇总和讨论所有的点评。
共聚焦显微镜
使用共聚焦显微镜(LSM710,蔡司公司(Zeiss))分析RTD最终饮料制剂样品。用以下试剂对样品染色:
-尼罗红(Sigma#Sigma N3013),用于在488nm激发波长下进行脂肪染色
-固绿FCF(Serva electrophoresis#SVA2129502),用于在633nm激发波长下进行蛋白质染色
重构的液体饮料的显微照片示于图4中。图4A示出了参照样品(加入奶精制剂的干微粉化香草颗粒的分散体),图4B则示出了包含在油中微粉化的香草颗粒的奶精样品。
结果
图4展示的共聚焦显微镜照片显示,当颗粒在油中研磨时,在油滴表面旁边观察到强烈的信号,而在参照样品中没有观察到特定的信号。油/水交界面旁颗粒的存在使得饮料更加稳定:颗粒在油滴表面的附着、存在和界面吸附使“油包微粉化调味品颗粒”实体比单个油滴更重(即,密度增加),并且比颗粒本身更轻(每单位体积)。在这些条件下,由于密度匹配阻止了油包微粉化香草颗粒的沉降。
实施例3
用于提供饮料粉末的方法
方法
在T=65℃下将肉桂粉末(粒度分布示于图5A中)加入到棕榈仁油中,混合20分钟,直到完全分散。然后使用湿砂磨机(Hosokawa Alpine水磨机90AHM(Hosokawa AlpineHydro-Mill 90AHM),T=65℃,1.7/1.9mm氧化锆珠,3000RPM,TS33)将该分散体微粉化。
通过砂磨机一次之后,微粉化颗粒的粒度分布特征在于d90,3为70μm,即90%的质量为直径小于70微米的颗粒。相应的粒度分布示于图5B中。
然后,将含有微粉化肉桂颗粒的油与单甘油酯DimodanTM和PanodanTM(杜邦公司(Dupont))混合。同时,将典型非乳制乳脂替代品成分(酪蛋白酸钠、磷酸氢二钾、六偏磷酸钠、柠檬酸钠和氯化钠)混合于水中,并置于容器中在50℃下进行搅拌。
然后,混合这两种混合物,并在50℃下搅拌,同时加入葡萄糖浆。将最终混合物均质化(APV-HTST),并对其进行巴氏灭菌(在85℃下,APV-HTST,持续5秒)。接着,在160℃下,对经过巴氏灭菌的混合物进行喷雾干燥(NIRO SD-6.3-N)。
在此实施例中,通过油相加入的肉桂颗粒占最终奶精干重的5%。
得到的奶精粉末用作粉末状饮料制剂的配料。为此,将包含微粉化肉桂的奶精粉末与糖和可溶咖啡粉末进行干混。典型的饮料粉末组成包含35%的含肉桂的奶精、12%的可溶咖啡和53%的糖。肉桂占奶精粉末质量的5%(即,最终饮料粉末质量的1.75%)。将获得的粉末装入小袋,并在使用热水重构时提供速溶咖啡饮料。在另一用途中,将所述粉末状饮料制剂装入胶囊,并提供借助于饮料系统(例如Nescaf é Dolce Gusto)重构制成的咖啡饮料。
制备组成相同的参照饮料粉末,其中肉桂不是如本发明所述经由油相加入,而是与糖一起干混到饮料粉末中。干磨的参照香草粉末的粒度分布如图5C所示。其特征在于d90,3为120μm。
溶解动力学分析
术语“溶解”是指使饮料粉末在液体中重构。术语t90指90重量%的粉末溶解于液体中所花费的时间。该时间t90可借助于导电率,即使用Metrohm module 856装置来精确测量。使水浴保持在恒定温度下。将导电率探头插入液体并保持不动,直到测得稳态导电率。将粉末加入液体中开始测量。可借助于磁力搅拌器来实施搅拌。片剂溶解后释放的离子增加了介质的导电率。通过完全溶解片剂,使导电率达到平稳状态。时间t90定义为从初始导电率过渡到总导电率的最终稳态值的90%时的时间点。更多细节可参阅Metrohm用户手册:http://partners.metrohm.com/GetDocument?action=get-dms-document&docid=1432097
结果
将盛有400mL水的玻璃烧杯保持在80℃。该烧杯配备有导电率探头和以250RPM转动的磁力搅拌器。将根据实施例3的饮料粉末按一份7g的剂量加入烧杯中,并开始测量导电率。监测导电率的变化600s,所述导电率与溶解的固体量成正比。通常在50-100s后形成稳定溶液,指示完全溶解。
为进行对比,制备包含等量肉桂粉末和具有相同总脂肪含量的参照样品,其中肉桂通过干混到饮料粉末组合物中的方式掺入。使用参照粉末进行相同的溶解测试。
对于参照样品和包含在油中微粉化肉桂的饮料粉末两者,图6示出了从开始到稳定状态值的导电率变化分别达到10%、50%和90%的时间点。
从结果可以看出,就溶解动力学而言,相对于含有相等碳酸钙和脂肪含量的干混碳酸钙粉末的传统饮料粉末制剂,在奶油基质中掺入在油中微粉化的肉桂酸钙具有显著的益处。
实施例4
用于提供奶油汤的方法
方法
将经研磨的咖喱粉(粒度分布示于图7A中)与预加热的棕榈仁油混合,并使用湿砂磨机(Hosokawa Alpine水磨机90AHM(Hosokawa Alpine Hydro-Mill 90AHM),T=65℃,1.7/1.9mm氧化锆珠,3000RPM,TS30)进行微粉化。
通过砂磨机一次之后,微粉化颗粒的粒度分布特征在于d90,3为134μm,即90%的质量为直径小于134微米的颗粒。
随后,将含有微粉化咖喱颗粒的油与单甘油酯DimodanTM和PanodanTM(杜邦公司(Dupont))混合。同时,将典型非乳制乳脂替代品成分(酪蛋白酸钠、磷酸氢二钾、六偏磷酸钠、柠檬酸钠和氯化钠)混合于水中,并置于容器中在50℃下进行搅拌。
然后,混合这两种混合物,并在50℃下搅拌,同时加入葡萄糖浆。将最终混合物均质化(APV-HTST),并对其进行巴氏灭菌(在85℃下,APV-HTST,持续5秒)。接着,在160℃下,对经过巴氏灭菌的混合物进行喷雾干燥(NIRO SD-6.3-N)。

然后,在下一步中将加有调味品的奶精粉末与表2所示的其他成分干混,以获得粉末状奶油汤。制备包含1%干磨咖喱粉末而其他组成相同的参照奶油汤,并与本发明的产品比较:包含1%的在油中微粉化且通过加有调味品的奶精粉末而加入到汤混合物中的咖喱的奶油汤。
重构的参照汤和根据本发明的包含在油中微粉化的咖喱的汤的感官特征由感官小组成员评价。经发现,本发明的组合物表现出更强烈的颜色和更强的咖喱味。
实施例5
用于提供奶油酱的方法
将实施例4的包含在油中微粉化的咖喱的奶精与表3所示的其他成分干混,以获得粉末状奶油酱。制备包含0.5%干磨咖喱粉末而其他组成相同的参照奶油酱,并与本发明的产品比较:包含0.5%的在油中微粉化且通过加有调味品的奶精粉末而加入到汤混合物中的咖喱的奶油酱。

Claims (15)
1.用于提供调味品组合物的方法,所述方法包括用于获得第一组合物的第一混合步骤和用于获得第二组合物的第二混合步骤;
其中
a)在第一混合步骤中将油组分与调味品混合并研磨所述在油中的调味品,从而提供第一组合物,所述第一组合物包含掺入到所述油组分中的平均粒度低于100微米(μm)的微粉化调味品;
b)提供包含乳蛋白、植物蛋白或其组合的水性组分,从而提供第二组合物;
c)在第二混合步骤中将所述第一组合物与所述第二组合物混合,以及
d)将所述组合物均质化,从而提供水包油乳液。
2.根据权利要求1所述的方法,其中所述第二组合物是乳蛋白,并且其中所述乳蛋白包含酪蛋白酸钠。
3.根据权利要求1所述的方法,其中所述方法还包括以下步骤:
-向所述水包油乳液中加入膨松剂和/或甜味剂;以及
-对所述水包油乳液进行巴氏灭菌或商业杀菌。
4.根据权利要求3所述的方法,其中所述膨松剂包含麦芽糖糊精、糖或碳水化合物和/或纤维的组合。
5.根据权利要求1至4中任一项所述的方法,其中所述方法还包括以下步骤:
-对所述水包油乳液进行干燥;以及
-提供调味品组合物。
6.根据权利要求1至4中任一项所述的方法,其中所述方法还包括以下步骤:
-使用直接或间接的方法进行HTST或UHT;以及
-填充洁净填充物、超洁净填充物(ESL)或无菌填充剂。
7.根据权利要求1至6中任一项所述的方法,其中一种或多种乳化剂
-在步骤a)中添加至所述第一组合物;和/或
-在步骤b)中添加至所述水性组分;和/或
-在混合步骤c)期间添加;和/或
-在均质化步骤d)期间添加。
8.根据权利要求1至7中任一项所述的方法,其中所述第一混合步骤a)通过研磨以使所述调味品组分微粉化来完成。
9.根据前述权利要求中任一项所述的方法,其中步骤b)的所述水性组分包含脱脂乳固形物、酪蛋白酸盐如酪蛋白酸钠、和/或乳清蛋白。
10.根据前述权利要求中任一项所述的方法,其中掺入到所述油中的调味品量与所述油的量之间的重量/重量比在0.01∶1至2∶1的范围内,诸如0.05∶1至2∶1、诸如0.1∶1至2∶1、诸如0.1∶1至1∶1、诸如0.4∶1至1∶1、诸如0.6∶1至1∶1、诸如0.8∶1至1或诸如1∶1。
11.根据权利要求10所述的方法,其中根据混合步骤c)的所述组合物包含至少5%(w/w)的其中包含微粉化调味品的所述油组分。
12.根据权利要求10或11中任一项所述的方法,其中根据混合步骤c)的所述组合物包含:
-5%至50%(w/w)的所述油组分,所述油组分包含掺入到其中的微粉化调味品,其中所述微粉化调味品占包含掺入到其中的微粉化调味品的所述油组分的总重量的2.5%至70%;
-1%至50%(w/w)的一种或多种蛋白质组分,例如包含酪蛋白酸钠;以及
-5%至70%(w/w)的糖源。
13.能够根据权利要求1至12中任一项所述的方法获得的调味品组合物。
14.根据权利要求13所述的调味品组合物用于生产RTD饮料、粉末奶精、液体奶精、混合咖啡、调味品麦芽饮料、巧克力、烘焙或烹饪产品诸如奶油汤或奶油酱的用途。
15.根据权利要求13所述的调味品组合物用于制备将在饮料分配器中使用的胶囊的用途。
