Abstract

Description
技术领域
本发明涉及用于生产冷冻甜食产品的设备和过程,更具体而言,涉及一种用于制备具有有趣装饰形状的冷冻甜食产品的过程,所述装饰形状带有精美的细节。
背景技术
锥形蛋卷冰淇淋产品,例如CornettoTM,是流行且众所周知的。这些产品通常由充满冰淇淋的威化锥形筒构成。消费者在不断寻找新的饮食体验,而常规的锥形筒产品可能被视为有点过时且无趣。例如,它们具有在冰淇淋的顶部上带有小凹槽的熟悉形状。
通过从喷嘴挤出冰淇淋来填充容器(例如锥形筒)是已知的,所述喷嘴沿相对于挤出方向相反的方向移动。例如,在锥形筒产品(例如CornettoTM)的工业化生产中,锥形筒通过喷嘴来填充,所述喷嘴在分配开始时位于锥形筒内,并且其随着锥形筒被填充而向上移动。这确保了冰淇淋一直到达锥形筒的底部。US 4 942 910公开了一种用于制作成某种形状的冷冻甜食的过程,其中喷嘴同时在水平面中沿圆形路径移动以及沿竖直方向直线移动,使得总的运动沿螺旋路径。这产生了成某种形状的冷冻甜食。

发明内容
现在,我们已经发明了克服这些问题的设备和方法。因此,在第一方面,本发明提供了一种用于生产冷冻甜食产品的设备,所述设备包括:
用于将冷冻甜食供给到喷嘴的入口的装置;
所述喷嘴包括腔和挤出板,其中挤出板限定了一个或多个孔;
所述孔具有从1mm至5mm的宽度和至少10mm的长度;
用于沿着与挤出方向相反的方向移动喷嘴的装置。
在第二方面,本发明提供了一种用于生产冷冻甜食产品的过程,所述过程包括:
将冷冻甜食供给到喷嘴,所述喷嘴包括腔和挤出板,其中挤出板限定了一个或多个孔;其中所述孔具有从1mm至5mm的宽度和至少10mm的长度;
将冷冻甜食从喷嘴的腔穿过挤出板的孔挤出;以及
同时沿着与挤出方向相反的方向移动喷嘴;以及
停止冷冻甜食的流动。
优选地,喷嘴的运动速度与冰淇淋的挤出速度相同。
优选地,所述孔具有从2mm至4mm的宽度,例如大约3mm。
优选地,冷冻甜食被挤出到容器中,例如杯、桶或锥形筒。

具体实施方式
设备的狭窄的孔导致了冷冻甜食的细流,这些细流产生精美的挤出图案。我们已经设想到,如果喷嘴在挤出期间保持静止,则随后的冷冻甜食会使这些流变形。但是,通过沿与冷冻甜食的流动相反的方向移动喷嘴,产生了轮廓分明、高度装饰性的形状。一旦形状已被形成,则通常借助于阀来停止冷冻甜食的流动。
所生产的产品可以包括在容器(例如,杯、桶或锥形筒)中的冰淇淋或其它冷冻甜食。在每次操作中分配的冷冻甜食的体积量优选为从30ml至300ml,优选为从50ml至200ml,例如大约100ml。
此过程能够在锥形筒产品、杯产品或桶产品的顶表面上产生非常美观的装饰。所能产生的形状包括被布置成形成下述形状的冷冻甜食的薄壁,所述形状例如螺旋、玫瑰或郁金香的形状,如图3中所示。精确的外观通过挤出板中孔的大小、形状和位置以及冷冻甜食的配给体积量和流动速率来控制。例如,对于给定的挤出板和喷嘴的运动速度而言,增加冰淇淋的流动速率导致具有更宽特征的产品。
为了保留在挤出期间形成的形状,所述壁不应如此薄以致这些壁在它们自身的重量下坍塌。因此,较高的壁需要更厚。同样,为了保留在挤出期间形成的形状,在挤出时,冷冻甜食优选为处在-5℃或以下的温度下。包含较低脂肪量的冷冻甜食优选在更低的温度下挤出,例如-7℃或以下。
在本发明的优选实施例中,设备的挤出板在孔之间具有另外的开口。这些开口可连接到这样的装置,所述装置用于从这些另外的开口强制供应气体。这样的实施例示于图2中,其中另外的开口1与空气通道2连通,空气通道2可连接到这样的装置,所述装置用于将气体强制供应到此空气通道2中,并因此从另外的开口1进行强制供应。在操作中,这种从这些另外的开口强制供应气体(例如,空气)的能力用来保持挤出的甜食的各个流相互分开,并允许生产带有类似于花朵的花瓣那样的精巧设计的特别精细的产品。
单个喷嘴能够被用于填充单个容器。可替代地,喷嘴的阵列能够被用于装饰具有多个部分的较大产品(例如1升的桶)的表面。
示例
图3和图4示出了使用本发明的设备和过程来形成的产品。因此,能够容易地看到,本发明能够给挤出的冰淇淋产品提供对它们表面而言非常精美和精细的装饰性修整。
Claims (10)
1.一种用于生产冷冻甜食产品的设备,所述设备包括:
用于将冷冻甜食供给到喷嘴的入口的装置;
所述喷嘴,其包括腔和挤出板,其中所述挤出板限定了一个或多个孔;
所述孔,其具有从1 mm至5 mm的宽度和至少10 mm的长度;
用于沿着与挤出方向相反的方向移动所述喷嘴的装置。
2.根据权利要求1所述的设备,还包括所述孔之间的开口,这些另外的开口可连接到用于从这些另外的开口强制供应气体的装置。
3.根据权利要求1或权利要求2所述的设备,其特征在于,所述孔具有从2 mm至4 mm的宽度。

同时沿着与挤出方向相反的方向移动所述喷嘴;以及
停止所述冷冻甜食的流动。
5.根据权利要求4所述的方法,其特征在于,所述喷嘴的运动速度与所述冷冻甜食的挤出速度相同。
6.根据权利要求4或权利要求5所述的方法,其特征在于,所述冷冻甜食被挤出到容器中。
7.根据权利要求6所述的方法,其特征在于,所述容器是杯、桶或锥形筒。
8.根据权利要求4或权利要求5所述的方法,其特征在于,气体从位于所述挤出板的孔之间的另外的开口被强制供应。
9.根据权利要求8所述的方法,其特征在于,所述气体为空气。
10.根据权利要求4或权利要求5所述的方法,其特征在于,所述冷冻甜食在-5℃或以下的温度下被挤出。
