MÉTODO DE FORMAÇÃO DE UM PRODUTO ULTRAFINO DE AMIDO OU FARINHA; MÉTODO DE FABRICAÇÃO DE UM PRODUTO ALIMENTÍCIO COMPREENDENDO A INCORPORAÇÃO DO PRODUTO DE PARTÍCULA ULTRAFINA DE AMINO OU FARINHA; MÉTODO DE FORMAÇÃO PRODUTO DE PARTÍCULA ULTRAFINA DE AMINO OU FARINHA; APARATO; PRODUTO EXTRUDIDO DE PARTÍCULA BASEADA EM AMIDO OU GRÃO ULTRAFINO COMPREENDENDO PARTÍCULAS À BASE DE AMIDO OU GRÃO ULTRAFINO; E; MÉTODO DE FORMAÇÃO DE UM PRODUTO ULTRAFINO DE AMIDO OU FARINHA. Trata-se de um método de formação de um produto de amido/farinha ultrafina que compreende pelo menos um dentre (a) ou (b), em que (a) compreende o aquecimento de uma mistura de água e amido/farinha natural/modificado e a extrusão da mistura com uma configuração de rosca que compreende, em série, pelo menos uma rosca de transporte dianteiro de baixo cisalhamento e pelo menos uma rosca de mistura de alto cisalhamento para produzir um extrudado. A etapa (b) compreende a formação de uma mistura de água, um lipídio e amino/farinha natural/modificado e a secagem da mistura para produzir um intermediário de amido/farinha lipídico seco. O amido/farinha de partida pode ser moído antes ou após as etapas (a) ou (b). O produto de partículas ultrafinas de amido/farinha tem uma solubilidade em água mais alta em comparação com um produto de partículas de amido/farinha que é produzido com uma configuração de rosca desprovida de uma rosca de mistura de alto cisalhamento ou um intermediário de amido/farinha produzido em (b) sem um lipídio.
