Abstract

Un proceso para realizar la extrusion de almidon con amilopectina para obtener un producto de almidon que tiene cierta viscosidad intrínseca cuando se disuelve o se dispersa en agua, donde el proceso requiere una cantidad de energía significativamente menor, cuando se compara con la extrusion de la misma cantidad de almidon regular para obtener un producto de almidon que tiene la misma viscosidad intrínseca. El uso de almidon con amilopectina en lugar del almidon regular en el proceso de extrusion, permite obtener una gran reduccion de energía.
