Abstract

Provided are an umami enhancing agent capable of enhancing umami by being added to a seasoning, extract, food, etc., and a method for enhancing umami. The present invention pertains to an umami enhancing agent including, as an active ingredient, an oxidized oil and fat having a peroxide value of 12-180 and containing 10 mass% or more to 100 mass% or less of milk fat. The present invention also pertains to a seasoning, an extract, and a food in which umami is enhanced by addition of the umami enhancing agent. The present invention furthermore pertains to a method for enhancing umami in a seasoning, an extract, and a food by adding thereto an oxidized oil and fat which has a peroxide value of 12 to 180 and contains 10 mass% or more to 100 mass% or less of milk fat.
