Abstract

The present invention refers to an improved process for obtaining corn masa or flour by a modified extrusion system which comprises two extrusion tubes, the first extruder serving for nixtamalizing corn, and the second extruder for accelerating the cooling action of the mixture, thereby avoiding the starch flocculation. The inventive process further includes systems for mechanically and electronically dispensing each of the elements forming the mixture to be used for producing nixtamal. The purpose of the present invention is to provide a nixtamalization process different from those currently available on the market since it has a novel construction and design for saving power, water and production time, thereby obtaining masa with nutrients by the traditional process and flour also having 100% fiber and nutrients contained in corn grains.
