Abstract
Se proporciona un producto alimenticio y proceso para hacerlo que da por resultado un producto de alto contenido de proteína de leche que tienen 10% a 25% de contenido de proteína de leche, fosfolípidos más altos comparado con la leche de vaca no adulterada, una relación de caseína a suero de por lo menos 50:50 y es estable en anaquel durante por lo menos seis meses. En el proceso la leche entera y por lo menos una fuente de proteína de leche se mezcla, se calienta y se pone en contacto con un ácido o sustancia acidulante y se co-precipita para producir un precipitado semi-sólido. El precipitado se mezcla con almidón y se coce.
