Abstract

La presente invención se refiere a sistemas nanoestructurados como protectores térmicos de ingredientes funcionales, los cuales están conformados por sistemas nanoparticulados, en donde dichas nanopartículas pueden ser nanocápsulas o nanoesferas. Las nanopartículas tienen un tamaño de partícula promedio no mayor a 350nm, y comprenden: (a) un polímero como membrana protectora; (b) ingredientes funcionales o activos que son incluidos en el núcleo de la nanocápsula para su protección; (c) agentes estabilizantes; y, (d) la utilización de soluciones soporte a base de polímeros de uso alimenticio.The present invention relates to nanostructured systems as thermal protectors of functional ingredients, which are formed by nanoparticulate systems, wherein said nanoparticles can be nanocapsules or nanospheres. The nanoparticles have an average particle size of not more than 350 nm, and comprise: (a) a polymer as a protective membrane; (b) functional or active ingredients that are included in the core of the nanocapsule for protection; (c) stabilizing agents; and, (d) the use of support solutions based on polymers for food use.
