Abstract

La presente invención se refiere a dispositivo de moldeo en continuo para confitería helada sobre un soporte, comprendiendo una cabeza de moldeo alimentada de producto pastoso, un órgano distribuidor del budín del producto pastoso, medios de fraccionamiento del budín y mecanismos de mando sincronizado del órgano distribuidor y de los medios de fraccionamiento, de manera que produzcan a partir del budín porciones individuales de forma regular, caracterizado porque la alimentación de producto pastoso es continua a presión constante, porque los medios de fraccionamiento están dotados con elementos para recoger las gotas producidas por el calentamiento del budín al ponerse en contacto con los medios fraccionamiento, cuando tiene lugar la formación de las porciones, y porque el dispositivo comporta medios para evacuar dichas gotas de modo que no se pongan en contacto con el soporte. Instalación para la fabricación en continuo de productos de confitería helada, caracterizada porque comporta un dispositivo de moldeo, un túnel de refrigeración de las porciones y un dispositivo de revestimiento de las fracciones.
