use python3.11 because python3.12 is not compatible update .gitignore

during the setup, I noticed some lack of documentation for
quick_start_advanced.sh, please review my commit, also this PR is mainly related to this PluginAlso, requests_mock was not available as a requirement.
Why do I want to indicate the Python version? because if you have python3.12 in your OS, then
quick_start_advanced.shwon't work correctly.PR: google/tsunami-security-scanner-plugins#608
