Follow up to #1157 and #1167

Electron's ecosystem (and specifically @electron/rebuild) now requires Node 22 or higher and node-gyp has bumped their own dependency chain to include Python 3.12, fixing the original MacOS Sequoia compatibility issue (see v10.2.0).

This PR brings us back onto the original node-gyp package from our fork.
