fix #422 Docs folder cleanup for vitepress / deadlinks

  • every page has its folder and index.md file
  • folder names are the same as origin md files => there should be no redirects
  • every reference in the content that used "index.md" or "xxx.md" removed and replaced - all references should follow the same standard: folder/ instead of folder/page.md
  • set Mergin Maps logo for light/dark mode (replaced Mergin Maps logo)
  • renamed pages in the sidebar

To be resolved / failing cheks:

  • there is a bunch of 429 errors in broken_links related to github references
  • redirect check does not like that we moved the "administer.md" to "administer/index.md". However, I believe the link should be the same after this change (https://merginmaps.com/docs/server/administer/environment/ ), so there is no redirect.
  • MM logo used for dark mode is reported as unreferenced, but it is referenced in config.mts file
