Food [“Hand-kneaded” stone oven Neapolitan pizza baked at 500℃]
Each piece of dough is kneaded by hand. The pizza flour is made by Caputo, an authentic Neapolitan company. It's a simple recipe that takes advantage of the characteristics of flour, but I was particular about humidity and temperature, and let it rest slowly and carefully. Served at the perfect thickness, neither too chewy nor too crispy. It is baked instantly in a Japanese stone oven at 500 degrees above and below, so you can enjoy the freshness of the local ingredients on top and the fragrant aroma of the dough.
Food Homemade noodle "elastic" fresh pasta made from roasted whole grain flour!
Our fresh pasta uses roasted germ whole grain flour, and we make noodles using only the moisture contained in the eggs themselves, without using any water. Tagliolini: Medium-thin noodles that go well with light sauces and soupy pasta. Fettuccine: Flat noodles that go well with rich creamy dishes.
