"Fukudokoro Shinken", a restaurant specializing in domestic tiger puffer fish, opened on February 9, 2017 (Fugu Day)! We are particular about puffer fish sashimi. After receiving a reservation from a customer, we order it from a supplier in Kyushu and it takes two days to arrive at the store, and then it is filleted and left to rest in the refrigerator for at least two days to mature. Therefore, although we apologize to our customers, we ask that you make a reservation four days in advance. However, this maturing process brings out the flavor and texture of the puffer fish to the fullest. We also purchase our own homemade ponzu sauce and Yasuoka leeks specially for puffer fish from Yamaguchi Prefecture. In Shimonoseki, the home of puffer fish cuisine, puffer fish is called "fuku" without the glottal stop, as it is considered a "fish that brings good fortune". We will do our best to deliver "fuku" to our customers who visit our store, so we appreciate your support. |
