ChefAkio Makimura - Beloved by the people for over a quarter century
Influenced by a TV drama he watched as a child, he aspired to become a chef. After graduating from Hattori Nutrition College, he trained for eight years at the Akasaka restaurant "Hasegawa". At the age of 27, he opened "Tako Nyudo", the predecessor to "Makimura", in Omori. After three and a half years, he opened "Makimura" in Omori in 1989. In 2010, he moved to his current location at Omori Kaigan. He has received three stars from the Michelin Guide Tokyo 2015. His goal is to become a restaurant that only serves one group per day.
Food Authentic Japanese Cuisine with a rich flavor
Makimura's desire to surprise and delight his customers is expressed not in the flashiness of his food, but in its simple depth. He is particular about hospitality, color, and above all, the "flavor" itself, and cooks in an uncompromising and unconventional way. His signature dish, "Tai Chazuke," features freshly cooked Uonuma koshihikari rice in a clay pot and sea bream sourced from the region where it is in season, and the dashi stock carefully made from Hokkaido kelp is exquisite. You can enjoy changing the flavor by changing the white rice, sesame sauce, and dashi stock.
SpaceThe warmth of a simple, relaxing space
The restaurant is simple, with six seats at the cypress counter and one private table, but it is spacious and luxuriously designed. The calm whiteness of the white plaster gives a sense of relief. The nostalgic yet dignified atmosphere makes guests feel as if they are visiting their parents' house or an old friend's house, and many guests even remark that they wish they could just take a bath and go to sleep. The comfortable space and the warm personalities of Mr. and Mrs. Makimura will have you losing track of time.

The menu is centered around fish purchased by the owner, Mr. Makimura, every morning at Tsukiji and Toyosu markets.
