Born in Hyogo Prefecture in 1931, Morita's father was a sushi chef, and he decided to enter the world of sushi at the age of 15. Since then, he has been dedicated to sushi to this day. Komatsu Yasuke in Kanazawa was once praised by the previous owner of Ginza's Kyubey as "the best sushi chef in Japan." It closed once in 2015, but made a long-awaited comeback in March 2017. Chef Morita values making sushi with heart, and his motto is "not just handing over sushi, but serving it with feelings in the palm of your hand."
