What is the deal with Goat and Sheep Cheese/Yogurt and Cholesterol
I'm hosting a friend who has high cholesterol and has cut out dairy and eggs from their diet in order to lower the numbers. I'm wondering what the literature says on goat and sheep cheeses and cholesterol, which seem to be better and possibly even positive. More details inside. [more inside]
Can I Eat This? (It Is About Cheese.)

Will a scratched stainless steel pot affect cheese flavour?

This is why we have cheese, right?
I need to pack my own allergen-safe food for a two-night/three-day trip in Southwest England this weekend. I want to bring a big block of Cheddar or Red Leicester so that I can have some protein in my thrice-daily sandwiches without spending fancy nut butter money (peanuts are among the relevant allergens). This is fine. Is this fine? [more inside]
WSU19
So that "Cougar Gold" cheese that comes in a can and lasts forever because of the WSU19 bacteria that means the can won't explode? WSU says they won't share the culture. I don't understand. Can't anyone just buy a can of the cheese and... use it to culture more canned cheese, and rinse/repeat indefinitely?

white new england cheese
For most of my life, I’ve considered the default color of both cheddar and American cheese to be yellow. I’ve always been aware of the existence of white cheddar and white American, but those have always seemed to be variations, like green tomatoes or blue corn tortillas. But not in New England. Why? Best ingredients for stovetop mac-and-cheese?
I have lately been into making smallish portions of Smitten Kitchen's quick, essential stovetop mac-and-cheese. I find it satisfies a craving, I usually have the basic ingredients, and it's good for accompanying or mixing in leftover bits and bobs. What is the best cheese for this if I want to add more intensive flavor but am not interested in super decadent richness? [more inside]
Cheese please

Looking for cheese tests for Mornay saucing purposes
I know what kinds of cheeses work well in a standard (Mornay) cheese sauce. Cheddar is good, colby jack, american, etc. But there are so many other kinds of cheeses and some of them (squinting angrily at mozzarella) do NOT work in a cheese sauce. How can I tell which cheeses will work in a sauce and which will fail in dramatic clumping fashion and cause the sauce to look like a big pot of coagulated baby vomit? [more inside]

Finest formulation for faux fromage blanc?
I’m cooking something later today that calls for fromage blanc, which I don’t have on hand. It’s a key component in the recipe (along with crème fraîche, which I do have) so I’d like to substitute it with something that’s as close as possible to the real thing. Fortunately I come from a family of dairy fiends, so the following are at my disposal when concocting a suitable replacement: ricotta cheese, fat-free Greek yogurt, American-style cream cheese, heavy whipping cream, sour cream, buttermilk, semi-skim (2%) milk.
Macaroni and cheese recipe with cheez whiz
My dad and I made this recipe in the early/mid-90’s. I really believe it was from the Long Beach Press-Telegram, but my memory isn’t that reliable. Definitely a magazine or a newspaper. I’m pretty sure it had onions and was a baked dish. I want to see the original source somehow. I miss my dad extra today and would like to make this recipe... [more inside]

Sudafed Cheese?
I took a Sudafed tonight (b/c weather --> sinuses), and Micro McGee is absolutely convinced that he's only ever heard the word "sudafed" when describing an alleged "sudafed cheese." improve my favorite snack
My current favorite snack is eating thin slices of very sharp cheddar with small bits of raw very hot peppers (habanero and such). The fattiness of the cheese tempers the hotness of the pepper so I can really appreciate the taste as well as the capsaicin glow. But I probably shouldn't be eating so damn much cheese. Any suggestions? [more inside]

I bought a pound and a half of 2%-milk based cheddar cheese. AMA!
I went to the supermarket to buy cheddar cheese, it was on sale, the 2% version looks nearly identical to the full-fat version. I bought two packages. I came home and was distraught, wanting all the fat I am entitled to, so I went back to the supermarket, and bought eight more ounces. Of a 2% version. [more inside]
