Culinary Chemists Plz Assist

I have recently switched my mug size from 10oz to 18oz. Usually I have at least one mug of tea a day, brewed from a tea bag directly in the mug, no milk. What I am having trouble figuring out is caffeine. Obviously, if I brewed the tea in a pot and poured it into a mug, the 10oz would have almost half as much caffeine as the 18oz. But, since I’m brewing both mugs with one single tea bag, that doesn’t apply, right? [more inside]

Caffeine Allergy or Sleep Apnea?

I had a small portion of coffee ice cream last night before bed, and every time I'd start falling asleep afterwards, I'd jolt out of it either gasping for air, or with my heart fluttering. My body wouldn't let me actually drift into sleep at all until several hours later. Is this a caffeine allergy/intolerance or sleep apnea (or both)? [more inside]

Switching from Soda to Coffee

I drink between 12 & 24 cans of soda a day. I have a few ailments and my doc wants me to lower the amount of soda I drink. She would prefer water, but knows that I don't like the taste of plain water or those droplet flavorings. As a compromise, she recommended trying to get into coffee and just have a few cups throughout the day. Help me put on and take off training wheels. [more inside]

Replacement for caffeine in terms of staying regular?

I quit caffeine about a month ago, and I'd like to stay off it because my anxiety is much better now. The one problem I'm running into is with bowel movements. Why don't they make painergy drinks?

You can buy energy drinks with caffeine and some taurine to cut the jitters. Athletes and high-performers drink often drink caffeine as a preworkout. The same group also takes painkillers for recovery or even for the event itself. And you can buy painkiller tablets, to drink with whatever liquid you want. Manufacturers also sell NSAID gels that you can rub on your body. So: Why don't they make drinks containing painkillers like ibuprofen? Or do they, somewhere, even with a tiny bit like < 10mg? Has this been tried in the past? [more inside]

Bean Roast Level for Arabic “Yellow” Coffee

So recently I have learned about Arabic coffee (qahwa/gahwa with cardamom) and I want to try making it at home! But apparently it requires extremely lightly roasted coffee beans, at least for the “yellow” style made in, say, Qatar. If I go to my local coffee bean roaster, who roasts the beans while you wait, what roast level should I ask for in order to make this style of coffee? Or should I just buy raw beans and try roasting them at home in a frying pan? Really, just give me all your yellow/green Arabic coffee knowledge!

Giving up caffeine long term?

Has anyone here given up caffeine? I am about a month into not consuming any, and while I initially – once I cleared withdrawal – felt some benefit, I'm now second guessing this decision. I feel like, especially during the middle of the day, I'm lacking energy, something I would normally address with a cup of coffee. I'm sleeping/eating/exercising a decent amount, so there's nothing else obvious I feel I could change. I work an office job. Is this as good as it gets? Any advice? Stick with it? [more inside]

Espresso vs Coffee - Why does my stomach handle Espresso and not Coffee?

Happy Friday MeFi, I was wondering if someone could shine some light onto why my stomach freaks out when I have regular coffee (Dunks, Starbucks, Keurig) but doesn't scream when I have Espresso? I can't quite wrap my heard around it, although I suspect it may have something to do with acidic content from instant-coffee, but whenever I try to have coffee from Dunkin Donuts or from one of those little Keurig cups, my stomach feels like it is being stabbed to death. It usually follows with a very painful stomach-ache for the next 30-45 minutes and then it goes away. However, if I use my work's espresso machine, it doesn't hurt my stomach at all. What gives? This is probably not related, but I have similar issues when I drink beer but no issues when I drink Vodka or Tequilla. Thanks for all your responses.

Reducing caffeine in tea

My pregnant wife wants to reduce her caffeine intake while still enjoying a few cups of tea each day so I suggested she follow the instructions in this Lifehacker post by brewing her tea for 30 seconds, throwing it away, then rebrewing with fresh water.
