Heat the olive oil in a large high sided saute pan stir the onions until onions begin to softness, then add the chicken bring to a simmer about 5 minutes.

Add garlic, bay leafs, cardamom, cinnamon, dried lemons, white pepper, tomatoes paste, tomatoes purree and water (cook on high heat for 30 minutes).

After 30 minutes, add the rice and salt, cook on a law medium heat until rice tender (20-25 minutes). I added almond and raisin as garnish.
