Abstract
PURPOSE: Ingredients as vegetables, meats, fishes, shells, beans or potatoes are fried with fat and heated with microwaves to remove the excess of the remaining water, thus making snack food with good texture from ingredients of high water content.
CONSTITUTION: Any of vegetables as pumpkin, green pepper, cabbage, onion, etc., meats, fishes, shells, beans or potatoes is fried with fat at 120W140°C as it is or in sliced forms. Before fried, they may be immersed in water, steamed, boiled or dried after boiled. After fried, the fat is drained and then they are heated by irradiating with microwaves (2450MHz in frequency number; 5kW in power). Before fried, the ingredients may be coated with wheat flour or coating. Since the frying temperature is low and the time is short, the inherent tastes of ingredients are kept.
