Abstract
Description
加熱殺菌したカシスに麹菌を種付けし、カシス由来の麹を製造する。この際の処理条件は、特に限定されないが、通常は20〜48℃で25〜72時間程度保持し、30℃〜37℃で42〜46時間程度保持することが好ましい。この工程において、麹に含まれる菌が、酵素を生成し、カシスに含まれるタンパク質や炭水化物の分解や変換が開始する。このようにカシスに麹菌が繁殖したものを、本明細書では「カシス麹」という。
上記により得られたカシス麹に、加水した後、30〜65℃、好ましくは約50〜55℃で加熱し、約5〜72時間、好ましくは約12〜48時間保持することにより、加水分解を行い、発酵カシスを得ることができる。この工程において、適度な温度に保持することにより、麹が生成した酵素の活性が高まり、カシス中に含まれるタンパク質や炭水化物の分解や変換をさらに進めることができる。このように、カシス麹を加水分解し、タンパク質の分解物であるアミノ酸や炭水化物の分解物であるグルコースを含有しているものを、本明細書では「発酵カシス」というものとする。なお、一般に約50℃以上で、麹菌は死滅すると考えられるが、必要に応じて、処理温度を下げたり、処理時間を短くしたりすることにより、上記発酵カシス中に麹菌を生存させておくこともできる。
生のカシス果実を、圧搾機を用いて水分を絞り出し、カシスの絞りカスを得た。得られたカシスの絞りカスに対して、麹菌(アスペルギルス・オリゼ)を種付けし、30℃〜37℃で46時間保持してカシス麹を作成した。得られたカシス麹10kgに対して、水3.8kgを加えた後、50〜55℃で約24時間保持して加水分解することで、発酵カシスを得た。
上記製造例で使用したカシス原料(試料a)、製造例で得られた、原料に麹菌を加えて得られたカシス麹(試料b)、カシス麹の加水分解物(試料c)、加水分解物を乾燥、粉砕して得られた発酵カシス粉末(試料d)のそれぞれにつき、液体クロマトグラフィーで遊離のアントシアニン含有量を調べたところ、結果は以下の通りであった。

発酵によるカシスの抗酸化力の変化について調べるために、発酵に用いる菌種をアスペルギルス・オリゼから、焼酎菌1(アスペルギルス・カワチ)又は焼酎菌2(アスペルギルス・アワモリ)に変更した以外は、上記発酵カシスの製造例1と同様の方法により、カシス麹及び発酵カシスを得た。
未発酵のカシスの絞りカスをサンプルA、焼酎菌1を用いたカシス麹をサンプルB、焼酎菌2を用いたカシス麹をサンプルB’、焼酎菌1を用いた発酵カシスをサンプルC、焼酎菌2を用いた発酵カシスをサンプルC’とした。

上記製造例1により得られた発酵カシスを用いて以下の通り飼料を調製し、ニワトリに対する試験を行った。
上記実施例1と比較例1の飼料をニワトリの平均体重と飼料効率により評価した。具体的な方法は以下の通りである。得られた平均体重と飼料効率の結果を表1に示す。
上記製造例1により得られた発酵カシスを用いて以下の通り養殖用飼料を調製し、ブリに対する試験を行った。
対象生物であるブリ約15000匹を、実施例2の飼料を与える群と、比較例2の飼料を与える群の2つの群に分けた。各群に対して、それぞれ同量の飼料を約5ヶ月の間、1週間に3回与え、下記の方法により、平均体重、通期増肉係数及び増肉単価を求めた。

- カシス果実の発酵物を含有してなる飼料。
- カシス果実の発酵物を乾燥物基準で0.01〜2質量%含有することを特徴とする、請求項1に記載の飼料。
- 前記カシス果実が、カシス果実の絞りカスであって、少なくとも果皮を含むことを特徴とする、請求項1又は2に記載の飼料。
- 前記カシス果実の発酵物が、麹菌、ビフィズス菌、並びにペニシリウム属、クリソスポリウム属、トリコデルマ属、アクレモニウム属、カンジダ属、ムコール属、リゾープス属、モナスカス属、及びアブシディア属の菌からなる群より選択される少なくとも1種の菌による発酵物であることを特徴とする、請求項1〜3のいずれか1項に記載の飼料。
- 請求項1〜4のいずれか1項に記載の飼料を、飼育対象生物に少なくとも週に1回摂食させることを特徴とする、生物の飼育方法。
- 請求項1〜4のいずれか1項に記載の飼料の製造方法であって、
カシス果実を、麹菌、ビフィズス菌、並びにペニシリウム属、クリソスポリウム属、トリコデルマ属、アクレモニウム属、カンジダ属、ムコール属、リゾープス属、モナスカス属、及びアブシディア属の菌からなる群より選択される少なくとも1種の菌を用いて発酵させる工程を含む、飼料の製造方法。 - カシス果実に麹菌を種付けしてカシス果実由来の麹を製造する工程と、
前記カシス果実由来の麹に加水及び加熱を行いカシス果実の発酵物を得る工程と、
前記カシス果実の発酵物を飼料に含有させる工程を含むことを特徴とする
請求項6に記載の飼料の製造方法。
