Young herring (Dutch) is very tasty in May and June.
1 apple (Cox Orange)
1 tomato
1 small onion
2 gherkins
2 young (Dutch) herring fillets
1 tsp fine chopped dill
1 tbsp Creme Fraiche
Ground black pepper
1 apple (Boskop)
4 twigs dill

1. Peel apple and core, blanch and skin tomato
2. Chop apple, tomato, onion and gherkins in tiny pieces
3. Mince herring fillets; mix with chopped apple etc. and dill
4. Add Creme Fraiche, salt and pepper
5. Peel apple (Boskop) and core, cut in four slices
6. Place mixture on slices, garnish with twigs of dill
