I have created a view that displays selected items of webform submission data. The theming information in the Views UI includes these (see image below) but appropriate templates are not called. and this is confirmed by using Devel's 'Enable theme debug' setting. Where in the code of Webform should I be looking to investigate further?

I'm not sure. Have you searched Drupal 7 pages to see if anyone has described how it works? You could also test with a D7 site to see if it ever worked.
