It would be helpful to be able to see how many pomodoro sessions I've completed on a particular day, instead of just seeing the number of hours and minutes.

There's a drop-down menu to the right of the Overview section. If you change from "Time" to "Sessions" you'll see the number of sessions.

Yes, but it only shows it for the current day and not for previous days (which is what I want).

You can use the history chart for that (starting from 3.0.4 which will be available soon).
