Using a meat thermometer?

So I have a real good thermometer, still I can't seem to find, even in the supposed middle of my chicken, anything below the recommended 165 temp that might suggest the red interior I end up with... I'm tired of poking holes and making swiss cheese out of my chicken! [more inside]

Apple Crisp in a Smoker? Am I Crazy?

I have this pie-in-the-sky idea that I can make an apple crisp in a smoker whilst delicious meats are also cooking. The temperature would be around 220F, and I'm thinking 2.5 hours would do it. Have I wildly miscalculated? [more inside]

once-a-week cooking ideas, vegetarian, low cal version, no freezer.

I'm looking for lunch and dinner ideas i can prepare on Sunday to eat throughout the week. Needs to be vegetarian and low calories (max 350 cal lunch and 450 cal dinner), and be ok to eat at room temperature, after spending half the day without refrigeration. Snowflake context below. [more inside]
